Greenhouse by Joost Bakker

The Melbourne based, dutch born designer Joost (pronouced ‘Yoast’) Bakker creates The Greenhouse.

The pop-up restaurant that grows its own ingredients and runs off the grid was built within 3wks. The restaurant takes a holistic approach to sustainability. The structure is made from reclaimed materials, that is not reliant on mains electricity or water. All furniture and building materials are reclaimed or recycled, organic waste is composted on site and used to feed the herbs growing on the roof.  Joost is, quite literally, ‘taking the p*ss’.  Urine from the public toilets on site will be harvested and turned into fertiliser. With a verdant rooftop bar housing over 30 plants and a luscious garden scaling the walls, it was designed to be a tranquil space to soak up the Riverside Melbourne food and wine atmosphere.
